Far too often people shrug off the idea of vegan‐ism for fear of missing a particular food, or they try vegan-ism but end up giving it up in it’s entirety for similar reasons. This is often the result of jumping into vegan-ism too quickly with too little preparation. That’s why it is so important to take the transition at a pace that works for you so that it’s sustainable. Learn the ins and outs of how the particular food is produced – this is often enough to turn you off the food for good. Cut out all barrier foods at once. Most people find that cravings for these foods only last a few short weeks and then they subside.
Approximately six to eight million adults in the United States eat no meat, fish, or poultry, according to a Harris Interactive poll commissioned by the Vegetarian Resource Group, a nonprofit organization that disseminates information about vegetarianism. Several million more have eliminated red meat but still eat chicken or fish. About two million have become vegans, forgoing not only animal flesh but also animal-based products such as milk, cheese, eggs, and gelatin.
To make sure you're getting enough healthy fats, include at least one of the following in each main meal: nuts and seeds (like almonds, walnuts, hemp, chia or flax), avocado, olive oil, coconut oil or coconut cream/milk, and butter or ghee if you include dairy products. Even if your diet is overall low in fat, try to still get about 20 percent or more of your daily calories from healthy sources of fat. Vegetarian diets are those that eliminate animal foods, including meat and fish, replacing them with plant-based foods like veggies, fruits, tubers, whole grains, legumes/beans and healthy fats. Some vegetarians choose to still include dairy, eggs or fish in their diets.
