Bulking, or putting on muscle, is a goal of many bodybuilders. To gain muscle, follow a strength and aerobic training routine — allowing adequate time for rest and recovery — and eat a diet that supports muscle growth. While traditional bulking diets contain significant amounts of protein in the form of chicken, lean steak and tuna, you can bulk up on a vegan plan too. Knowing what foods to incorporate and when helps you achieve your goals.
A large salad with chickpeas, vegetable soup with kidney beans or a black-beans-with-brown-rice dish are all high-fiber lunches. The beans add fiber as well as protein, both of which help make you feel more satisfied and not deprived. For dinner, stir fry Tempe or tofu with minimal oil and serve with a mound of roasted vegetables, or steam the veggies and spritz with lemon juice. A small serving of whole grains, such as quinoa or wild rice, or a starchy vegetable round out the meal. The size of your servings depends on how many calories you have figured you need daily to achieve your goal.
Keep your grains in check. A healthy plant-based diet absolutely includes plenty of whole grains, but only about 5 – 8 servings per day, depending on your calorie needs. So, make sure you’re not overdoing cereals, breads, and grain servings throughout your day. Keep in mind that many people (and especially restaurants) can dish up four servings of pasta per portion, and dipping into the bread basket before meals can add a few extra servings of grains before you know it. A serving of grains is generally ½ cup cooked grains or pasta, or one slice of bread or a small tortilla.
